Legacy Garlic

Legacy Garlic (Allium sativum var. ophioscorodon Legacy) is a hardneck porcelain garlic variety known for its large, pearly white bulbs composed of four to six plump, easy-to-peel cloves. Its rich, mild, and well-balanced flavour leaves a rounded, lingering taste that works beautifully in a wide variety of recipes. Its upright, blue-green foliage reaches 50 to 70 cm in height before turning yellow at maturity. Extremely hardy to Zone 2, Legacy garlic is perfectly suited to Quebec winters and provides abundant harvests with excellent storage life after proper curing.

Plant the cloves in fall with the pointed end facing upward, approximately 5 cm deep, spacing them 10 to 15 cm apart and leaving 30 cm between rows. Grow them in full sun in loose, fertile, organically rich, and perfectly drained soil. An application of well-aged compost before planting encourages the formation of large bulbs, while excessive nitrogen mainly promotes foliage growth. Water lightly after planting, then moderately during active growth without saturating the soil. Gradually reduce watering before harvest and remove the flower scapes to encourage larger bulb development.

Legacy garlic is ideal for family vegetable gardens, food gardens, edible flower beds, and large, well-drained containers. It grows well alongside carrots, tomatoes, beets, lettuce, and strawberries while helping deter certain pests. Its young flower scapes are edible and delicious sauted, grilled, or made into pesto. The cloves are perfect for sauces, stews, grilled dishes, roasted garlic, lacto-fermentation, and everyday recipes. Harvest when approximately half of the foliage has turned yellow, then cure the bulbs in a dry, shaded, and well-ventilated location.
